What eucalyptus honey tastes like
Eucalyptus blossoms give a honey with an instantly recognisable aromatic profile: intense and warm, with a cool, menthol-like finish.
Gislène Bouteille keeps her hives in Koumac, at the northern tip of Grande Terre, among the eucalyptus trees bordering the mining ranges. A harsh, dry environment, where heat and aridity forge a powerful honey.
Where our eucalyptus honey comes from
Koumac, the far north
Koumac, in the north-west of Grande Terre, is a land of heat and mining ranges. Far from the most populated areas, this dry terroir offers a generous bloom and a honey of strong character.

Yes, naturally, like most raw honeys. It then takes on a thicker texture. A warm water bath (below 40 °C) is enough to make it runny again.
In a hot infusion, with goat's or sheep's cheese, or in meat marinades. Its strong character pairs with bold flavours.
