What mangrove honey tastes like
Mangroves line the Caledonian lagoon. When the mangrove trees flower, the bees gather a singular nectar that gives a mineral, almost saline honey, very different from land-blossom honeys.
Marc Puig has made this demanding terroir his speciality. His hives stand in Voh, at the lagoon's edge, as close as possible to the mangrove trees, and his harvests follow the rhythm of their bloom.
Where our mangrove honey comes from
Voh, home of the famous Heart
Voh, on the west coast, is world-famous for its “Heart of Voh”, a heart-shaped clearing in the middle of the mangrove made famous by photographer Yann Arthus-Bertrand. Few beekeepers work this environment between land and sea, which is what makes this honey so rare.

In Japanese green tea or oolong, its mineral notes create an unexpected pairing.
In the kitchen
To glaze fish or prawns, in a soy-ginger sauce, or with fresh goat's cheese.

Not really: it is first and foremost a sweet honey. But its finish is mineral, almost briny, a nod to its environment between land and sea.
