The honey

What tamarind honey tastes like

The tamarind (Tamarindus indica) is a tall tree with fine foliage whose flowering varies from year to year. Its honey is one of the rarest in our collection.

Manon Xowie keeps her hives in Yaté, in the deep south, at the foot of tamarind trees that are sometimes a century old, in a forest terroir untouched by intensive farming. Every year she works around their irregular bloom to bring in a harvest worthy of this terroir.
